1 lb Chicken breast (ground)

5 tble lime juice
1/4 cup fish sauce
1/2 tea Fresh Chilli (finely chopped)
2 tble Onion (minced)

1 tble Sweet rice (ground and toasted)
1/8 cup Spring onion (chopped
1/8 cup Fressh Mint leaves (chopped)
1/8 cup Cilantro (chopped)
1] Heat wok
2] Add sauce ingredients and stir
3] Add chicken and stir fry until cooked
4] Add rest of ingredients and cook for 5-10 minutes (until all liquid has reduced)
4 Chicken breasts
2 Garlic Cloves
1 Green chilli
3/4 inch Fresh Ginger (grated)
4 tble Cilantro (chopped)
Zest of one lime grated
3 tble Lime Juice
2 tble Light Soy sauce
3/4 cup Coconut Milk
1 tble Superfine Sugar
1] Cut slashes into chicken, place in bowl in a single layer
2] Place all other ingredients in a food processor and "blitz" until smooth
3] Spread liquid over chicken and marinate (preferably over night)
4] Remove chicken from marinade and cook on baking sheet (about 20 minutes)
5] Place marinade in a saucepan and bring to the boil and simmer for several minutes
1 lb Pork (minced) Chicken or Turkey will also work well - NOT beef
3 Cloves Garlic (finely chopped)
3 Shallots (finely chopped)
1 inch Fresh Ginger (grated)
2 tble Vegetable Oil (NOT Oil)
2 tble Fish Sauce
1 tble Dark Soy Sauce
1 tble Red Curry Paste
4 Plum Tomatoes (chopped)
3 tble Cilantro (chopped)
Salt & Pepper
1] Stir fry garlic, shallots, ginger for about 2 minutes
2] Add pork - stir fry until meat cooked
3] Sir in fish sauce, soy, curry paste and fry for 1 - 2 minutes
4] Add tomatoes - cook for 5 minutes
5] Stir in cilantro, salt & pepper
1/2 pound Beef (chopped small) - Chicken and Turkey work very well
2 tble Vegetable oil
4 Cloves of Garlic (minced)
1 tea Chilli (finely chopped)
1/2 cup Onions & Peppers (sliced)
1 cup Basil Leaves (torn)

1 tble Oyster sauce
2 tble fish sauce
1 tble suger - I only use 1/2 tea
1/8 tea White pepper

1/2 cup Cilantro (chopped)
2 Spring Onions (chopped)
1] Heat pan, add oil, garlic and chilli
2] Add chicken and fry until cooked - but NOT browned
3] Add onions and peppers, fry until cooked - but still firm
4] Add basil - cook 1/2 minute
5] Add sauce ingredients - cook I minute
6] Garnish with cilantro and spring onions
2 measures Whiskey
1 measure Cherry Brandy
1 measure Contreau
1 measure Lime Juice
1 tsp Light sugar (optional)
dash Angostura Bitters
1/2 cup either or both Pinapple Juice, Orange Juice
2 cups Long Grain Rice (cooked)
1/2 cup Peas (cooked)
1 Clove Garlic (minced)
1 small Onion (finely chopped)
1 tble Red Curry Paste
1 tble Fish Sauce
2 tble Tomato Ketchup
2 tble Cilantro (chopped)
1] Stir fry garlic and onion
2] Add curry paste, rice and Peas (heat through)
3] Mix fish sauce and ketchup together and stir into rice
